1- Open image in Illustrator
2- Adjust artboards if needed
3- Click "Image trace" on the right hand side (toolbar).
4- Choose Color mode in the Image trace settings
Important: for transparent backgrounds, make sure "Ignore White" option is checked
5- Click "Trace"
6- Once that's finished, click "Object" in the top nav, then select: Image Trace > Expand
7- You may now edit the vectors or save as AI/SVG
